So lets talk all things roast dinner, we all have our favourite right !...
For some people its chicken, (not really a big fan), or lamb now i love myself a bit of roast lamb. Or turkey again not really a big fan. Beef now i wouldn't say no to a bit of roast beef, i'm still working on how to deliver the perfect roast beef, mine turns out a bit dry.
And then all the trimmings
Pork, roasted in a wood burning stove..
The smell around the house when the oven door is opened and the crackling OMG the crackling that me and mandy would fight over how nana got it so crispy only she knows
and that's whats on the menu today, roast pork (no idea what cut cos im not a butcher and i didn't ask lol)
And then bean asks me "Did you kill an animal for that" 🤦♀️🤦♀️, Shit what do i say to that..........
" no i didn't kill it myself but someone did" "so who did then?" ok i know that i gave the wrong answer and said the Butcher 😂😂, he then continues to say "which animal is this mum?" "A pig 🐷"......... " ummmm eeeww i dont want that" ... we will see right .
So i put the pork in the oven at 180 for two and a half hours after cutting the skin for the crackling, i used sea salt (rubbed into skin) and crushed black pepper, I didn't add any oil. I put it on to a rack over a baking tray. I kept it at that heat until the last half hour and then turned it up to 200.
Trimmings well i made apple sauce for the first time and if i knew it was that easy i would have made it before 🙄🙄.
Honey and apple roasted carrots, and its just like its says, lol chopped apples (cooking apples) into pieces, i did quarters but its up to you. Sliced carrots put in tray and added honey and a touch of cinnamon mix up and roast for a half hour or until carrots are tender. The apple would have broken down by now and this can be used for your apple sauce if you like, just mash.
Bean was in charge of the broccoli and cauliflower, (which was just steamed) he's saying all morning "can i help" and we teach our children so many things so why not let cooking be one of them!!! and it all turned into a bit of a family affair with himself at the spuds (thankfully cos i hate pealing them).
Roast spuds just put into a dish with some olive oil and seasoned. I think they roasted for about 45 minutes.
Yorkshire puddings of course especially for bean. ( and after all of that he didnt eat them)
Potato stuffing...... now this is the base that i use for fishcakes as well minus the cinnamon (i will get to it) so its basically mash spuds, parsley and thyme, for the fishcakes i also use chillies, salt and pepper. So himself said its missing something 🙄🙄😶😶 cheek!!! He goes its missing the brown stuff goes to the cupboard and find cinnamon .......??????? smelt it and goes yea that's it, i'm like what no way, he ended up putting it in there and goes nope that's not what was missing, 😂😂😂🤣🤣🤣 " no what was missing was paprika (red not brown) but we don't have any" he goes its nice anyways that's what my nan put in it, ( i will be checking that fact)
Gravy from a box 😂😂😁🙄, cos there has to be a cheat somewhere.
This was hours of cooking and normally i would say for busy parents and hungry kids fast quick meals but on a day like today (being of on a Sunday) i pulled out all the stops, i was planning this meal since Friday at work, telling any customer that would listen that i was cooking this roast today 😁😁😁, they probably thought "would she ever shut up" lol .
The smell is still around in the house as i write this, i'm now having a glass of wine cos i will admit all those hours in the kitchen makes one tired mummy lol. all worth it to see the meal eaten with no words spoken until the plate was cleaned. Someone couldn't wait for me to plate, and FYI He didn't eat the pork, i think i might have a vegetarian on my hands lol.
