"oh its a two dinner day"

"crap its gonna be a two dinner day"

Now i know this isn't exactly what busy families need, however today is my day off plus i have a few bits there for a handy stirfry for me or a stew im actually sat here with no idea what to cook........ sound familiar ?,

How about left over pork and beans pie? Does not sound one bit nice, casserole maybe ?

ok so i have on the list

butter beans

tin tomatoes

chick peas

Mixed beans and a taste of home....... tomato paste, This is also going to be used on the pizza as the base (yea two birds one stone) stay tuned im of to the shop


A few hours later..... and i have my beans lol .

Tomato Paste, i think this was traditionally made for sandwiches. Every family on the island makes it different.... yet the same, some families don't add bacon (rasher) some don't add egg. But i think for the most part the other ingredients remain the same, oh aside from the chilli 🌶🌶🌶🌶 so like it mild and some hot and well some just super dupper hot. Between two cuts of home cooked bread omg the taste, This was often a sandwich that i like with cheese, weird?!?! i dunno tasted good to me.

For my tomato paste i used a packed of rashers so about 6 rashers, sliced an diced,

3 tins of tomatoes, nana used to use fresh when they were in season really ripe ones. with plenty fresh parsley (that seem to be grown everywhere).

a spoon full of sugar a lil salt to taste, (careful though smoked rashers tend to be salty enough).

1 onion diced onion

parsley (although there isnt any in mine as bean doesn't like it and i'm using this as the tomato sauce base for the pizza).

I added the rashers to a hot dry pan, plenty fat will come out to cook it.

After they have browned a bit add in the onion and fry gently until soft. Add the tomatoes, then sugar and salt is needed. (this is where i took a bowl of it out for the pizza) I added some mix herb paste and thyme and chilli.

Turn down to a lower heat , in the meantime i have the left over roast pork diced and found a few mushrooms in fridge so added those to the dish.

I put in all the beans plus the pork and some diced onion rough chopped and the tomato paste gave a stir and popped into the oven, 180 for two hours, did i mention i've never cooked this before, it will be eatable right 😁😁😁. halfway through the cooking check it and give a stir add a lil water if its to thick for you. It smells great so lets check it ..........Yep its done and in my mouth. has a smokey flavour 🤔🤔🤔🤔 i wonder why?

But now for the chef of the house, My lil bean i used to always make pizzas, Not the base i haven't that much time.....

Using the tomato paste added flavour to the pizza and then its simple just added your choice of toppings, beans choice was pepperoni and ham... He has no idea that there is rasher in the sauce although he did taste it and said it was good. (this is the lil boy who told me last night that he wont eat any meat that is killed for food...... Hes 5!!!!
